All you have to do is throw all your ingredients of Lychees In Lime Syrup
- 2 565g cans lychees
- 5 limes
- 110g (1/2 cup) sugar
- 500mls (2 cups) water
- 2 sprigs fresh mint
- 1 carambola (star fruit), sliced, to serve
The instruction how to make Lychees In Lime Syrup
- Drain lychees and reserve syrup. Peel the rind from 2 limes using a vegetable peeler. Remove white pith from the rind and cut rind into thin strips. (Alternatively, use a zester.) Juice all the limes.
- Combine 185ml (3/4) cup of the lychee syrup with lime juice, sugar, water and mint in a medium saucepan. Stir over medium heat until the sugar dissolves and bring to the boil. Boil, uncovered, over medium-high heat for 5 minutes or until syrup is reduced slightly. (See microwave tip.)
- Remove from heat, discard mint and cool the syrup to room temperature. Place lychees in a large bowl, add the rind strips and pour over the syrup. Serve with the carambola.
