  2. 2 oranges, segmented (see notes), plus 2 tablespoons orange juice
  3. 55g (1/4 cup) caster sugar
  4. 1 egg white
  5. 200ml creme fraiche (see note)
  6. 60ml (1/4 cup) thickened cream
  7. 10 savoiardi biscuits (sponge fingers)

  1. Cut passionfruit in half and scoop pulp into a bowl. Add orange juice and 1 tablespoon sugar, then stir to combine.
  2. Using an electric mixer, whisk egg white until frothy. Gradually add remaining 2 tablespoons sugar, whisking for 1 minute or until stiff and glossy.
  3. Using an electric mixer, beat creme fraiche and cream together for 1 minute or until firm peaks form. Using a spatula, fold in egg white, in 3 batches, then gently fold in 1 tablespoon passionfruit mixture.
  4. Divide orange segments among glasses, reserving 4 to serve. Crumble 1 1/2 sponge fingers into each glass, then top each with 1 tablespoon passionfruit mixture.
  5. Spoon half the creme fraiche mixture among glasses and crumble over remaining sponge fingers. Spoon over remaining creme fraiche mixture, then top each parfait with 2 teaspoons passionfruit mixture. Refrigerate for 30 minutes, then drizzle with remaining passionfruit mixture and top with reserved segments.
