  2. 4 yellow peaches, halved, stoned
  3. 1/2 bunch radishes, thinly sliced
  4. 250g cooked baby beetroot, drained, halved
  5. 120g Coles Australian Baby Spinach
  6. 1/2 red onion, thinly sliced
  7. 100g goats cheese, crumbled
  8. 1/4 cup (60ml) balsamic dressing
  9. Flat-leaf parsley leaves, to serve
