  1. 1 cup (250ml) red table wine
  2. 3 cups (750ml) water
  3. 1 cinnamon stick
  4. 4 beurre bosc pears, peeled
  5. 1 cup (220g) caster sugar
  6. 150g butter
  7. 3/4 cup (155g) brown sugar
  8. 2 eggs
  9. 1 1/2 cups (225g) self-raising flour
  10. 100g almond meal
  11. 1 tablespoon ground ginger
  12. 1 teaspoon mixed spice
  13. 1/4 cup (60ml) milk

  1. Combine 1 cup (250ml) red table wine, 3 cups (750ml) water, 1 cinnamon stick and 4 beurre bosc pears, peeled in a saucepan. Simmer over medium heat for 20 minutes. Remove pears, halve and remove cores. Add 1 cup (220g) caster sugar to liquid. Boil for 10-15 minutes. Set aside to cool.
  2. Preheat oven to 180u00b0C. Line a 7cm deep, 21cm x 11cm loaf pan with baking paper. Beat 150g butter and 3/4 cup (155g) brown sugar. Beat in 2 eggs. Fold in 1 1/2 cups (225g) self-raising flour, 100g almond meal, 1 tablespoon ground ginger, 1 teaspoon mixed spice and 1/4 cup (60ml) milk until combined.
  3. Spoon into the pan and smooth the surface. Press the base of the pear halves into the cake mixture, standing them upright. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean. Serve the warm red wine pear cake drizzled with the syrup.
