  1. 1 cup (150g) self-raising flour
  2. 1/2 cup (75g) plain flour
  3. 100g almond meal
  4. 3/4 cup caster sugar
  5. 125g butter, melted and cooled
  6. 2 eggs
  7. 1/2 cup (125ml) milk
  8. 3 ripe kiwifruit, finely chopped
  9. 1 lime, rind finely grated
  10. 3/4 cup (180ml) lime juice
  11. 3/4 cup caster sugar

  1. Preheat oven to 180u00b0C. Grease a 6 x 1 cup muffin pan. Place flours, almond meal and sugar in a large bowl. Stir well to combine.
  2. Whisk butter, eggs and milk together. Add to dry ingredients with kiwifruit. Mix well. Spoon mixture into pans. Bake for 25-30 minutes or until golden.
  3. Cool in pan for 15-20 minutes before turning out onto a wire rack.
  4. To make syrup, place lime rind, lime juice and sugar in a small frying pan. Stir over low heat until sugar dissolves. Increase heat and simmer for 8-10 minutes or until thickened slightly.
  5. Use a skewer to make holes over the cakes. Pour over the syrup. Place cakes on serving plates and spoon over any syrup caught in the tray. Serve warm.
