  8. 120g pkt baby mesclun
  9. 100g sliced ocean trout
  10. 2 tablespoons Praise low fat mayonnaise

  1. Cook the potatoes in a large saucepan of boiling water for 10 minutes or until tender. Drain and mash. Add the shallots, dill and egg, and mix to combine. Season with pepper. Set aside to cool slightly. Shape into 4 large patties.
  2. Dip the potato cakes into the flour and shake off the excess. Heat the olive oil in a large nonstick frying pan over a medium heat. Cook the potato cakes for 2-3 minutes each side or until golden brown. Transfer to a plate.
