  1. 2 litres chicken stock
  2. 1 head garlic, cut in half
  3. 2 sticks lemongrass, cut into 5cm lengths
  4. 1.5kg whole chicken
  5. 1 tablespoon soy sauce
  6. 1 tablespoon brown sugar
  7. 1/4 cup vegetable oil
  8. 4 green shallots trimmed, cut in half
  9. 2 cm piece ginger, crushed
  10. 2 cloves garlic, crushed
  11. 1/2 long red chilli, finely chopped
  12. 2 tablespoons coriander, chopped leaves
  13. 10 cm piece ginger, sliced

The instruction how to make Lemongrass Chicken With Ginger Paste

  1. Place stock, garlic, ginger, lemongrass and shallots into a large stock pot. Bring to the boil.
  2. Wash chicken and immerse into stock, cover and simmer for 30 mins. Remove pot from heat, cover and leave to steep for 2 hrs.
  3. Remove chicken from pot, reserving liquid and drain on a wire rack then cut into pieces. Heat 1 cup of strained liquid in a pot with soy sauce and brown sugar.
  4. Heat a frypan with 2 tablespoons of oil and pan fry a few of the chicken pieces until skin is golden. Repeat with remaining oil and chicken.
  5. To make the ginger paste: Combine ingredients.
  6. Serve chicken with steamed rice, seasoned cooking liquid and Ginger Paste.
