- 3 cloves garlic
- 1/4 cup roughly chopped fresh flat-leaf parsley
- 2 tablespoons fresh coriander, chopped
- 2 tablespoons fresh thyme leaves
- 1 tablespoon fresh oregano
- 2 small red chillies, seeded and chopped
- Zest of 2 lemons
- Green part of 2 green onions/spring onions
- Pink sea salt and black pepper
- 1/4 cup red wine vinegar
- 1/3 cup extra virgin olive oil
- 1 teaspoon honey

- Blend all the ingredients except the oil and honey gently together. Next add the oil a little bit at a time. The oil should bind the chimichurri not dominate it.
- Taste and add the honey a little at a time until a good balance is achieved. Taste again and add more salt, oregano and oil to suit your taste.
