All you have to do is throw all your ingredients of Herbed Lamb Racks
- 1/3 cup (85g) Bertolli with Butter, or Bertolli with Butter Reduced Salt
- 1 tablespoon fresh flat-leaf parsley, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh oregano, finely chopped
- 2 garlic cloves, crushed
- 2 Coles Australian Lamb Racks, French trimmed
- 1 zucchini, thinly sliced into ribbons
- 120g pkt Coles Brand Australian Baby Spinach
- 1 bunch radishes, thinly sliced
- 100g Australian fetta, crumbled
The instruction how to make Herbed Lamb Racks
- Preheat oven to 200C. Combine Bertolli with Butter, parsley, thyme, oregano and garlic in a small bowl. Rub three-quarters of the mixture over lamb. Place in a roasting pan. Season. Roast for 12 mins or until cooked to your liking. Cover with foil and set aside for 10 mins to rest.
- Arrange the zucchini, spinach, radish and fetta on a serving platter. Season. Melt the remaining herb mixture in a small saucepan over low heat. Drizzle over the salad. Serve with the lamb.
