  1. 1/3 cup (85g) Bertolli with Butter, or Bertolli with Butter Reduced Salt
  2. 1 tablespoon fresh flat-leaf parsley, finely chopped
  3. 1 tablespoon fresh thyme, finely chopped
  4. 1 tablespoon fresh oregano, finely chopped
  5. 2 garlic cloves, crushed
  6. 2 Coles Australian Lamb Racks, French trimmed
  7. 1 zucchini, thinly sliced into ribbons
  8. 120g pkt Coles Brand Australian Baby Spinach
  9. 1 bunch radishes, thinly sliced
  10. 100g Australian fetta, crumbled

The instruction how to make Herbed Lamb Racks

  1. Preheat oven to 200C. Combine Bertolli with Butter, parsley, thyme, oregano and garlic in a small bowl. Rub three-quarters of the mixture over lamb. Place in a roasting pan. Season. Roast for 12 mins or until cooked to your liking. Cover with foil and set aside for 10 mins to rest.
  2. Arrange the zucchini, spinach, radish and fetta on a serving platter. Season. Melt the remaining herb mixture in a small saucepan over low heat. Drizzle over the salad. Serve with the lamb.
