All you have to do is throw all your ingredients of Mixed Bruschetta

  1. 1 French bread stick (baguette), cut diagonally into 24 slices
  2. Olive oil spray
  3. 1 garlic clove, halved
  4. 6 bocconcini
  5. 1 tablespoon olive oil
  6. Pinch of dried chilli flakes
  7. 1 1/2 teaspoons finely grated lemon rind
  8. 12 asparagus spears, trimmed, cut into 10cm lengths
  9. 150g chargrilled red capsicum, thinly sliced
  10. 1 tablespoon olive oil
  11. 2 sprigs fresh thyme
  12. 2 garlic cloves, thinly sliced
  13. 2 small fennel bulbs, trimmed, thinly sliced
  14. 120g goats cheese
  15. 12 semi-dried tomatoes, thickly sliced
  16. 75g chunky sun-dried tomato pesto
  17. 3 teaspoons fresh thyme leaves

  1. Spray both sides of bread with oil. Preheat a chargrill on high. Cook bread, in batches, for 1-2 minutes each side or until slightly charred. Rub garlic over 1 side of the bread.
  2. To make the bocconcini, asparagus & capsicum topping, cut the bocconcini into 24 slices. Place on a plate. Drizzle over oil and sprinkle with chilli and lemon rind. Season with salt and pepper. Preheat a chargrill on high. Cook the asparagus for 3-4 minutes or until tender and slightly charred. Halve each spear lengthways. Top half the bread slices with the bocconcini, capsicum and asparagus.
  3. To make the goats cheese, fennel & tomato topping, heat the oil in a frying pan over medium heat. Cook the thyme sprigs and garlic for 30 seconds or until aromatic. Add the fennel and cook, stirring, for 8 minutes or until tender and slightly caramelised. Remove and discard the thyme sprigs. Spread the remaining bread slices with the goats cheese. Top with the semi-dried tomato, pesto and the fennel mixture. Top with the thyme leaves.
  4. Divide bruschetta among serving platters.
