  1. 1/2 cup fresh continental parsley, lightly packed, roughly chopped
  2. 2 tablespoons olive oil
  3. 1 garlic clove, finely chopped
  4. 1 teaspoon lemon rind, finely grated
  5. 1 teaspoon ground coriander
  6. 1/2 teaspoon sweet paprika
  7. 1/2 teaspoon ground cumin
  8. 1/4 teaspoon ground turmeric
  9. Salt & ground black pepper
  10. 500g chicken tenderloins
  11. 150g baby spinach leaves, washed, dried
  12. 250g (1 punnet) cherry tomatoes, halved
  13. 125g (1/2 cup) Greek-style natural yoghurt
  14. 2 tablespoons milk
  15. 1/3 cup fresh coriander, roughly chopped
  16. 2 green shallots, trimmed, finely chopped
  17. Salt & ground black pepper

The instruction how to make Middle Eastern Spiced Chicken Salad

  1. Place the parsley, oil, garlic, lemon rind, coriander, paprika, cumin, turmeric, salt and pepper in a medium bowl and mix to combine. Add the chicken and toss to coat in the spice mixture. Cover and place in the fridge for 30 minutes to marinate (or longer if time permits).
  2. Meanwhile, to make the dressing, place the yoghurt, milk, coriander and green shallots in a small screw-top jar. Shake well to combine. Taste and season with salt and pepper. Place in the fridge until required.
  3. Preheat grill on high. Place a wire rack over a baking tray and place the chicken on the rack in a single layer. Cook under preheated grill for 3-4 minutes or until the chicken is light golden. Turn the chicken and cook for a further 2-3 minutes or until cooked through.
  4. Place the spinach and tomatoes in a medium serving bowl. Add the chicken and toss to combine. Drizzle with the dressing just before serving.
