  1. 1 onion, cut into thin wedges
  2. 1 carrot, cut into thin batons
  3. 1/2 green capsicum, thinly sliced
  4. 1/2 yellow capsicum, thinly sliced
  5. 1/2 red capsicum, thinly sliced
  6. 3 broccoli florets, broken into small pieces
  7. 3 cauliflower florets, broken into small pieces
  8. 4 cups mushrooms, sliced
  9. 6 snow peas, sliced lengthways
  10. 6 green beans, cut into 5cm lengths
  11. 2 sticks celery, thinly sliced
  12. 2 garlic cloves, crushed
  13. pinch chilli powder, optional
  14. 450g can chopped tomatoes

  1. Place all ingredients into a wok over low heat. Cover and cook, stirring every 2 minutes, for 10 to 15 minutes or until vegetables are tender.
