  1. 2 tablespoons peanut oil
  2. 8 Coles RSPCA Approved Chicken Drumsticks
  3. 440g can pineapple pieces in natural juice, drained, juice reserved
  4. 5cm piece ginger, peeled, cut into matchsticks
  5. 1 tablespoon soy sauce
  6. 1 chicken stock cube, crumbled
  7. 1 teaspoon Chinese five spice
  8. 1/2 cup (125ml) water
  9. 1 spring onion, sliced
  10. 450g pkt microwavable Jasmine rice
  11. 300g pkt Coles Australian Superfood Stir-fry mix
  12. 1/4 cup (60ml) oyster sauce
  13. 1 long red chilli, thinly sliced
  14. Spring onion, extra, thinly sliced, to serve

  1. Heat half the oil in a large frying pan over medium-high heat. Add chicken and cook, turning, for 6 mins or until browned all over. Add reserved pineapple juice, ginger, soy, stock cube, five spice and water. Bring to a simmer.
  2. Reduce heat to medium-low and simmer, covered, for 15 mins or until chicken is almost cooked through. Increase heat to medium-high. Add half the pineapple and cook, uncovered, for 10 mins or until liquid has reduced and thickened.
  3. Meanwhile, heat remaining oil in a large saucepan over medium-high heat. Add onion and cook, stirring for 2 mins or until starting to brown. Add rice and cook, stirring, for 1 min. Add stir-fry mix, oyster sauce, remaining pineapple and chilli and cook, stirring, for 3 mins or until heated through.
  4. Sprinkle with spring onion. Serve chicken with fried rice.
