  3. 1/2 cup burghul (cracked wheat)
  4. 2 tablespoons olive oil
  5. 1 brown onion, chopped

  7. 1/2 teaspoon sumac
  8. 1/2 teaspoon paprika
  9. Pinch ground cumin
  10. 1/2 cup flat-leaf parsley leaves, finely chopped
  11. 2 tomatoes, diced
  12. 2 cucumbers, diced
  13. 1 small red onion, diced
  14. 1/4 cup flat-leaf parsley, finely chopped
  15. 1 small lemon, juiced
  16. 1/2 teaspoon sumac

  1. Place lentils in a heavy-based saucepan with water. Cover. Bring to the boil. Skim froth from top of water and discard. Reduce heat to medium-low and simmer, uncovered, for 25 minutes. Remove from heat. Stir in burghul. Cover and set aside.
