  1. 2 zucchini, trimmed, quartered lengthways
  2. 2 baby eggplant, trimmed, quartered lengthways
  3. 8 green onions, trimmed, cut into 5cm lengths
  4. 2 garlic cloves, crushed
  5. 2 tablespoons olive oil
  6. 1 small lemon, juiced
  7. 1 tablespoon extra-virgin olive oil
  8. 50g feta, crumbled
  9. 2 tablespoons mint leaves

  1. Place zucchini, eggplant, onions and garlic in a ceramic dish. Drizzle with olive oil. Season with salt and pepper. Stir to coat.
