  1. 25g butter
  2. 2 leeks, thinly sliced
  3. 2 tsp olive oil
  4. 3 cups Massel chicken style liquid stock
  5. 2 cups water
  6. 650g chicken lovely legs
  7. 6 sprigs fresh thyme
  8. 1/2 cup pearl barley
  9. 5 fresh prunes, chopped, plus extra for serving
  10. 1/4 cup fresh parsley, chopped
  11. Salt and pepper, to taste

The instruction how to make Cock-a-leekie

  1. Heat butter and olive oil in a large saucepan over medium-high heat. Add leeks. Cook, stirring, for 5 minutes or until softened.
  2. Add chicken stock, water, chicken and thyme. Simmer, partially covered, for 45 minutes. Remove chicken and chop flesh. Discard bones.
  3. Add pearl barley. Simmer for 45 minutes or until barley is cooked.
  4. Add the chopped chicken, 5 prunes and parsley. Season. Sprinkle with extra prunes.
