  1. 2 teaspoons olive oil
  2. 3 shortcut bacon rashers, trimmed, chopped
  3. 500g jar spicy pepper pasta sauce
  4. 2 cups beef consomme
  5. 400g can butter beans, drained, rinsed
  6. 1 cup frozen mixed vegetables
  7. 1/3 cup dried risoni
  8. 3 slices sourdough garlic bread, cut into large cubes
  9. Chopped fresh parsley leaves, to serve

  1. Heat oil in a large heavy-based saucepan over medium heat. Add bacon. Cook, stirring, for 5 minutes or until golden. Add pasta sauce, consomme and 1 1/2 cups cold water. Bring to the boil. Reduce heat to low. Simmer for 5 minutes.
  2. Add beans, vegetables and risoni. Season with salt and pepper. Simmer, stirring occasionally, for 15 minutes or until risoni is tender.
  3. Meanwhile, heat a large non-stick frying pan over medium heat. Cook garlic bread, turning, for 6 to 8 minutes or until golden and heated through.
  4. Serve minestrone topped with garlic bread and parsley.
