  1. 500g chopped zucchini
  2. 2 chopped peeled potatoes
  3. 3 cups chicken consomme
  4. 1/2 cup basil leaves
  5. 1/3 cup cream
  6. Sea salt & pepper
  7. 2 teaspoons sour cream
  8. 2 teaspoons chopped roasted hazelnuts
  9. Finely grated lemon rind
  10. Basil leaves, extra

The instruction how to make Zucchini & Basil Soup

  1. In a medium saucepan add 500g chopped zucchini, 2 chopped peeled potatoes and 3 cups chicken consomme, bring to the boil, simmer for 8-10 mins or until vegetables are tender. Remove from heat, stir in 1/2 cup basil leaves.
  2. Place in food processor, blend until smooth. Return to saucepan, add 1/3 cup cream, sea salt and pepper. Simmer for 5 minutes or until thickened.
  3. Spoon soup into bowls. Top with 2 teaspoons sour cream, 2 teaspoons chopped roasted hazelnuts, a little finely grated lemon rind and extra basil leaves.
