  2. 1 brown onion, chopped
  3. 2 garlic cloves, crushed
  4. 1kg very ripe tomatoes
  5. 160ml (2/3 cup) water
  6. 1/4 cup finely shredded fresh basil
  7. Salt & freshly ground black pepper

  1. Heat the oil in a medium frying pan over medium heat. Add the onion and garlic, and cook, stirring often, for 3-4 minutes or until the onion softens slightly.
  2. Meanwhile, use a sharp knife to cut a shallow cross in the base of each tomato. Place the tomatoes in a large heatproof bowl and cover with plenty of boiling water. Cover and set aside for 1-2 minutes or until the skins begin to split. Drain the tomatoes. Carefully peel the skins and discard. Roughly chop the tomatoes.
  3. Place the onion mixture and tomatoes in the bowl of a food processor and process until smooth. With the motor running, gradually add the water, processing until combined. Transfer the soup to a large bowl and stir in the basil. Taste and season with salt and pepper. Cover and place in the fridge for 15 minutes to chill before serving.
