  1. 150 Italian-style bread, cut into 3 cm cubes
  2. 1/2 cup (125ml) olive oil
  3. 1/3 cup (80ml) red wine vinegar
  4. 2 cloves garlic, crushed
  5. 1 teaspoon caster sugar
  6. 2 tablespoons marjoram leaves
  7. 250g punnet grape tomatoes
  8. 1 red capsicum, seeded, coarsely chopped
  9. 2 Lebanese cucumbers, coarsely chopped
  10. 1/2 cup (80g) kalamata olives
  11. 1 baby cos lettuce, leaves separated
  12. 12 slices salami, cut into strips

  1. Preheat oven to 180u00b0C. Place brad on a large oven tray and drizzle with 2 tablespoons of olive oil. Bake in oven for 10 minutes or until crisp and golden.
  2. Meanwhile: whisk together remaining oil, vinegar, garlic, sugar and marjoram in a small bowl. Season with salt and pepper.
  3. Pour dressing into a large salad bowl. Squeeze tomatoes, one at a time, over the bowl, so they burst and release their juices into dressing. Add tomatoes, croutons and remaining ingredients to dressing, and toss to combine. Serve.
