  2. 1 garlic clove
  3. 3/4 teaspoon salt, plus a pinch extra
  4. 2 tablespoons fresh lemon juice
  5. 1/2 teaspoon black pepper
  6. 5 tablespoons extra-virgin olive oil, plus more for drizzling
  7. 1 can chickpeas, rinsed and drained
  8. 1/2 cup sliced or slivered almonds
  9. 1/3 cup pitted black olives, sliced
  10. 1/3 cup red capsicum, diced
  11. 1 package spinach leaves

  1. Bring a pot of salted water to a boil; add the quinoa and cook until just tender, about 12 minutes. Drain well.
