  6. 1/2 cup fresh mint leaves, torn
  7. 1/2 cup toasted peanuts, chopped
  8. 1/4 cup pickled ginger slices
  9. 100g packet fried crunchy noodles
  10. Zest and juice of 1 lime
  11. 1 tablespoon fish sauce
  12. 1 fresh long red chilli, deseeded, finely chopped
  13. 2 teaspoons brown sugar
