  2. 6 shortcut bacon rashers, cut into thin strips
  3. 2 x 120g pkts baby rocket, washed, dried
  4. 200g (1 cup) semi-dried tomatoes
  5. 80g shaved parmesan
  6. 2 tablespoons bought Caesar salad dressing (optional)

The instruction how to make Rocket Salad

  1. Heat the oil in a large frying pan over medium heat. Add the bacon and cook, stirring occasionally, for 5 minutes or until golden. Transfer to a plate lined with paper towel. Set aside for 5 minutes to cool slightly.
  2. Place the rocket in a serving bowl. Add the bacon, semi-dried tomatoes and parmesan. Drizzle over the dressing to serve, if desired.
