  1. 400g spaghetti
  2. 3 large ripe tomatoes, finely diced
  3. 1 medium red onion, finely diced
  4. 1/3 cup roughly chopped fresh basil
  5. Salt & ground black pepper, to taste
  6. 2 tablespoons olive oil
  7. 2 garlic cloves, crushed
  8. 1 bunch rocket, stems trimmed, washed, dried
  9. 150g Greek feta,
  10. crumbled Crusty bread, thickly sliced, to serve

  1. Cook pasta in a large saucepan of salted boiling water, following packet directions until al dente.
  2. Meanwhile, combine tomato, onion, basil, salt and pepper and 1 tablespoon of the olive oil in a bowl. Set aside. Drain pasta and set aside. Return the saucepan to heat.
  3. Add remaining 1 tablespoon olive oil and cook garlic for 30 seconds over medium heat. Add tomato mixture and rocket. Toss over heat until rocket just wilts. (See microwave tip.)
  4. Add pasta and crumbled feta and toss to combine. Serve immediately with crusty bread.
